Apple-Cinnamon Protein Pancakes
Fluffy pancakes with grated apple and cinnamon protein. Easy to make and perfect for a cozy breakfast.
Ingredients
- 70 g finely grated apple
- 1 egg or egg substitute
- 30 g oat flour
- 20 g cinnamon protein powder
- approx. 60 ml plant-based milk
- ½ tsp baking powder
- optional: a little oil for the pan
Preparation
Mix the grated apple with the egg.
Add the oat flour, cinnamon protein powder, and baking powder.
Stir in the plant-based milk until a smooth, thick batter forms.
The batter should slowly fall from the spoon. If it seems too thick, add a little more plant-based milk.
Lightly grease a pan and heat it over medium heat.
Cook small pancakes in batches and flip them as soon as the surface becomes slightly firm and small bubbles form.
Tip
Serve with thin apple slices, a little almond butter, or yogurt.
Important Information
- Depending on the type of apple, the batter may need slightly more or less liquid.
- It is better to start with less plant-based milk and add more if needed.
- Do not cook the pancakes over too high heat, so that they cook evenly inside.
- Additional sugar is usually not necessary.
